What You Typically Receive With a Half Steer

A half steer provides approximately 200–250 lbs of take-home beef and offers a great variety of premium steaks, roasts, ground beef, and specialty cuts.

Typical cuts may include:

• Filet mignon / tenderloin
• Ribeye steaks
• New York strip steaks
• Sirloin steaks
• Flat iron steak
• Skirt and flank steak
• Brisket
• Chuck and sirloin-tip roasts
• Short ribs
• Cube steak
• Stew meat
• Ground beef
• Osso buco / shanks
• Marrow and soup bones
• Tri-tip and picanha, when available

You Choose How Your Beef Is Cut

You will receive a custom cut sheet to select your preferred cuts, steak thickness, package sizes, roast sizes, and ground-beef packaging.

The number and size of individual cuts will vary depending on the weight and size of your steer and your cutting preferences. For example, choosing 1-inch steaks may provide approximately 15–20 steaks of a particular cut, while thicker steaks will result in fewer steaks.

Some choices also affect other cuts. For example, choosing T-bones and porterhouses means you will receive fewer separate New York strips and filet mignons.

Every steer is different, so final take-home weight and individual cut quantities cannot be guaranteed.

Whole Steer

A whole steer provides approximately 400–500 lbs of take-home beef. Final weight varies depending on the size and weight of the steer and your custom cutting instructions.

You will receive a custom cut sheet to choose your preferred cuts, steak thickness, package sizes, roast sizes, and ground-beef packaging.
